Reds Category One
The Red's shown here are mostly harvest from grapes later in the season, with different levels of sweetness and fruit, and a multitude of taste sensations.
The harvesting process starts with grapes....
1.) ... picked at various times after the regular harvest.
2.) ... remaining on the vines to very late in the season, until the the
grapes get attacked by the fungus Botrytis Cinera (Noble Rot), resulting in
Sauternes, Beerenaulsesen and Trockenbeerenauslesen.
3.) .... freezing on the vine, chancing the weather to the first frost.
Eliminating in this process almost all of the water in the grapes, with only pure fruit remaining in the grape. This gives you the ultimate in winemaking.. the "EISWEIN".
All these processes are very risky, labor intensive, more expensive and many times rare.
