Dry white's are great for today's healthy cooking. The cellar master can create excellent wines with today's modern technology.
To produce great white's the winery must or choose.....
1.)...to take enormous care to harvest all types of the grapes quickly and gently, so not to bruise them .
2.)...to ferment the juices in cooled temperature controlled fermentation tanks. This preserves the freshness and delicacy of the fruit.
3.)...Or the cellar master might chose to do barrel fermenting, especially using Chardonnay, giving the wine lushness and complexity.
